Abstract

Background. This research was conducted at the University of X, West Java where researchers used secondary data from the University of X “Programs Sertifikasi Laik Higiene Sanitasi Kantin 2016-2018”. The purpose of this study was to determine the relationship between hygiene and sanitation with E. coli contamination in food at Food Establishment (TPM) at University X. Methods. The subjects used in this study amounted to 71 TPM. Results. The results showed no association between E. coli contamination and all TPM hygiene and sanitation variables. Conclusions. However, the researchers suggested that the TPM management always educate and train food handlers to prevent contamination of food.

Bahasa Abstract

Latar Belakang. Penelitian ini dilaksanakan di Universitas X, Jawa Barat dimana peneliti menggunakan data sekunder yang berasal dari “Program Sertifikasi Laik Higiene Sanitasi Kantin 2016-2018”. Tujuan dari penelitian ini adalah mengetahui hubungan antara higiene dan sanitasi dengan kontaminasi E.coli pada makanan di tempat pengelolaan makanan (TPM) di Universitas X. Metode. Adapun subjek yang digunakan dalam penelitian ini berjumlah sebanyak 71 TPM. Hasil. Hasil penelitian menunjukan tidak adanya hubungan antara kontaminasi E.coli dengan seluruh variabel higiene dan sanitasi TPM. Simpulan. Walaupun demikian, peneliti menyarankan kepada pihak pengelola TPM agar selalu melakukan edukasi dan pelatihan terhadap penjamah makanan agar mencegah terjadinya kontaminasi pada makanan.
